Wine making has been around for thousands of years and is a natural process that requires very little human intervention.
It is a family or friends gathering time around the vines. Choosing when to harvest the grapes is a major fact in how the wine will turn out. We used to destemmer by hand and crush the grapes with our hands. Now days, we have small corkscrew crusher to do that, so we don’t need to do the destemmer by hand. If the stem is left attached to the grape for too long, it will give off a bitter taste later.
For the next step, the pressing, we used a small mechanical press. We never did it like they do it in Italy with your feet in a huge barrel.
Pressing was done by the men in the house, from this point only the men will take care of the wine. To keep the secret of the process.
Our Brewery
Story
We produce beer in small batches with a strong focus on quality, flavor, and creativity rather than mass production. It combines traditional brewing methods with modern techniques, with ingredients such as different malts, hops, and yeast strains to create distinctive tastes and aromas, using the local Water supply from an underground well of 600 meters deep digged in our highest point of the village of Bshealeh. From carefully selecting raw materials to controlling fermentation, each step plays a key role in shaping the final beer. This hands-on approach is what gives craft beer its unique character and wide variety of styles.
We Produce spirits in small batches with an emphasis on quality, authenticity, and hands-on craftsmanship rather than large-scale industrial output. Using carefully selected ingredients and closely controlled distillation processes, craft distillers create spirits with distinctive flavors and character. Attention to detail at every stage—from fermentation and distillation to aging and finishing—allows for experimentation, originality, and a strong connection between traditional techniques and modern innovation.
